Convert linear arrays into matrices

Description
As reported in https://www.openmicroscopy.org/community/viewtopic.php?f=6&t=2100&p=6106#p6106, services like rawPixelsStore returns linear arrays but provides little information on how to convert these arrays into matrices.
To address this issue, we should:
- review/add documentation on the conversion of byte arrays
- improve existing Matlab functions converting linear arrays into matrices
